Recently we had the chance to sit down over a nice bottle of wine and good food at the Hamilton Inn. One of the dishes that we ordered was the Caramelized Bacon Wrapped Scallops. This dish is a specialty of Executive Chef John Tubolino and a popular dish on their dinner menu.
The scallops were of good size and perfectly done. Wrapped in bacon, the flavors of this classic dish were enhanced by the citrus butter sauce, and the fennel and onion confit. The plate came with sliced citrus fruit and a garnish on top, which on a hot summer day helped make this a very light tasting dish. It paired perfectly with a Pinot Grigio and was a hit all around the table.
